Curry Fried Rice With Ham
- 2 cups long-grain rice
- 1 head broccoli, cut into small florets
- 1 tbsp oil
- 1 tbsp curry powder
- 1 None onion, thinly sliced
- 1 clove garlic, finely chopped
- 2 None carrots, peeled and cut into strips
- 1 cup bean sprouts
- 2 slices cooked ham, cut into thin strips
- 1/4 cup soy sauce
- 1 tsp sambal oelek (Indonesian ground chili paste)
- Cook the rice according to package directions. Cook the broccoli florets in boiling salted water for 1-2 mins. Drain and set aside.
- Heat the oil in a wok or large skillet on high heat. Add the curry powder and cook 5 seconds. Add the onion and garlic and stir-fry for 2 mins. Add the rice, carrots and bean sprouts and stir-fry for about 5 mins. Add the broccoli and ham.
- Mix the soy sauce and sambal oelek until smooth. Add to the fried rice and stir-fry 30 seconds. Season to taste and serve.
