Sausage And Sweet Potato Shepherds Pie
- 1 lb lamb sausages or other meat sausages
- 1 tbsp olive oil
- 1 small onion, finely chopped
- 3 None celery stalks, finely chopped
- 1 can (14 oz) diced tomatoes
- 1 cup frozen peas
- 1 1/2 tbsp Worcestershire sauce
- 1 None tomato, thickly sliced
- 3 cups mashed sweet potatoes
- 2 tbsp butter, chopped
- Preheat the oven to 400u0b0F.
- Heat a large nonstick skillet on high heat. Cook sausages 2-3 mins, turning, until golden. Cut into bite-sized pieces. Set aside.
- Heat oil in same pan on high heat. Saute onion and celery 3-4 mins. Stir in tomatoes and bring to a boil. Return sausages to skillet. Reduce heat to low and simmer 4-5 mins. Stir in peas and Worcestershire sauce.
- Divide among four 1 1/2-cup ramekins. Top with a tomato slice and sweet potato mash. Dot with butter. Place ramekins on a baking pan.
- Bake 15-20 mins, until golden.
