Porridge With Strawberry Compote
- 2/3 cup dried strawberries, coarsely chopped
- 1/2 cup dried apricots, coarsely chopped
- 3/4 cup unsweetened cranberry juice
- 1 tbsp sugar
- 1/2 cup rolled oats
- 1/2 cup rolled barley
- 1 tsp ground cinnamon
- 2 cups skim milk
- 1/2 cup low fat plain yogurt, to serve
- For the strawberry compote, place strawberries, apricots, cranberry juice and sugar in a medium saucepan on medium heat. Cook and stir for 1-2 mins or until sugar dissolves. Bring to a boil. Reduce heat to low; simmer uncovered, for 10 mins or until fruit is soft and liquid syrupy. Cool for 30 mins.
- Place oats, barley, cinnamon, milk and 3/4 cup water in a large saucepan on medium heat. Bring to a boil, stirring. Reduce heat to low; simmer, stirring constantly, for 5 mins or until thick.
- Spoon porridge into bowls. Top with yogurt and compote. Serve at once.
