Porridge With Strawberry Compote

  1. For the strawberry compote, place strawberries, apricots, cranberry juice and sugar in a medium saucepan on medium heat. Cook and stir for 1-2 mins or until sugar dissolves. Bring to a boil. Reduce heat to low; simmer uncovered, for 10 mins or until fruit is soft and liquid syrupy. Cool for 30 mins.
  2. Place oats, barley, cinnamon, milk and 3/4 cup water in a large saucepan on medium heat. Bring to a boil, stirring. Reduce heat to low; simmer, stirring constantly, for 5 mins or until thick.
  3. Spoon porridge into bowls. Top with yogurt and compote. Serve at once.
