Chicken And Avocado Subs

  1. Combine ground chicken, breadcrumbs, egg, mustard and thyme in large bowl.
  2. Squeeze excess moisture from apple, carrot and onion. Add to chicken mixture; mix well. Season to taste. Roll heaped tablespoonfuls of mixture into 24 small, flattened patties. Arrange on a tray. Refrigerate until required.
  3. Heat oil in a large skillet on medium heat. Cook patties, in two batches, 3-4 mins each side, until golden and cooked through. Drain on paper towel.
  4. Fill each roll with 3 patties. Top evenly with arugula, avocado and tomato. Serve with potato chips and mayonnaise.
