Potato And Leek Gratin
- 6 medium potatoes, peeled and thinly sliced
- 2 medium leeks, washed and thinly sliced
- 1 1/2 cups heavy cream
- 1/4 cup vegetable stock
- 1 clove garlic, thinly sliced
- 1 None egg
- 1/2 cup fresh breadcrumbs
- 1/3 cup grated Parmesan cheese
- 1/4 cup chopped parsley
- Preheat the oven to 350u0b0F. Lightly grease a 6-cup baking dish.
- Place potato, leek, cream, stock and garlic in a large saucepan on medium heat. Bring to a boil. Reduce heat to low and simmer for 10-12 mins, until potatoes are tender.
- Using a slotted spoon, remove vegetables from cream mixture and layer in prepared dish. Whisk egg into cream and season to taste. Pour over vegetables.
- Mix breadcrumbs, cheese and parsley in a medium bowl. Sprinkle over vegetables.
- Bake for 25-30 mins, until golden and crisp.
