Potato And Leek Gratin

  1. Preheat the oven to 350u0b0F. Lightly grease a 6-cup baking dish.
  2. Place potato, leek, cream, stock and garlic in a large saucepan on medium heat. Bring to a boil. Reduce heat to low and simmer for 10-12 mins, until potatoes are tender.
  3. Using a slotted spoon, remove vegetables from cream mixture and layer in prepared dish. Whisk egg into cream and season to taste. Pour over vegetables.
  4. Mix breadcrumbs, cheese and parsley in a medium bowl. Sprinkle over vegetables.
  5. Bake for 25-30 mins, until golden and crisp.
