Madeleines With Caramelized Strawberries
- 1 cup unsalted butter, melted
- 1/2 cup all-purpose flour
- 1/2 cup powdered sugar, plus extra, for dusting
- 1/2 cup ground almonds
- 6 None egg whites
- 1 tbsp honey
- 2/3 cup granulated sugar
- 1 lb strawberries, halved
- None None whipped cream, to serve
- Preheat oven to 350u0b0F. Using a pastry brush, brush madeleine molds evenly with butter then dust lightly with flour, shaking off excess.
- Cook remaining butter over medium heat for 5 mins, until golden brown and nutty. Remove from heat and carefully transfer to a ceramic bowl. Let cool.
- Meanwhile, sift flour and powdered sugar into a bowl. Add ground almonds. In a separate bowl, whisk egg whites until frothy. Add almond mixture and whisk to combine. Whisk in brown butter and honey. Distribute between prepared molds and bake for 12-15 mins, until light golden and springy. Let cool in pan for 10 mins then transfer to a wire rack to cool completely.
- For the caramelized strawberries, combine sugar and 1 cup water in a small saucepan. Heat, stirring, until sugar dissolves. Add strawberries and cook for 2-3 mins, until soft.
- Dust madeleines with powdered sugar. Serve with strawberries and whipped cream.
