Creamy Baked Vegetables
- 1 lb potatoes, peeled and cut into wedges
- 2/3 lb brussels sprouts, peeled and halved
- 1 lb carrots, trimmed and sliced
- 1 tbsp butter
- 1 None onion, diced
- 2 tsp curry powder
- 5 tbsp all purpose flour
- 1/2 cup heavy cream
- 3 1/2 oz feta
- Preheat the oven to 425u0b0F. Cook the potatoes and sprouts in a large pan of boiling, salted water for 5-6 mins then add the carrots and continue to cook for a further 4-5 mins. Drain.
- Heat the butter in a saucepan, add the onion and saute for 2-3 mins. Stir in the curry powder and flour and saute for a further 1-2 mins. Gradually stir in the cream and 1 2/3 cup of water. Season and simmer for 4-5 mins, until the sauce thickens. Mix in the vegetables then transfer the mixture to a baking dish.
- Crumble feta over the top of the dish then place in the oven to bake for 10-15 mins. Serve.
