Chicken In Mushroom Sauce With Herby Mashed Potatoes

  1. Cook potatoes in boiling salted water for 20 mins.
  2. Heat oil in a saucepan and saute chicken, turning, for 3 mins. Add onion and mushrooms and cook for 4 mins. Season then add flour and cook for 2 mins. Add cream, stock, mustard and spring onions and simmer for 2 mins.
  3. Drain potatoes, add milk and butter and mash. Add parsley and chives. Season and add nutmeg. Serve with chicken and sauce.
