Asian Herb Salad

  1. Place the rice in a sieve and rinse under cold water; drain. Place the rice in a small saucepan and cover with water. Bring to the boil. Reduce the heat to medium-low; cover and simmer for 35 mins or until the rice is soft and just split. Drain; cool.
  2. Meanwhile, for the sesame dressing, whisk all ingredients in a small bowl.
  3. Combine the rice with the remaining ingredients in a large bowl; toss gently to combine. Transfer to a bowl or a portable container, if using for a picnic.
  4. Drizzle the sesame dressing over the salad just before serving.
