Asian Herb Salad
- 1/2 cup wild rice
- 1 medium red pepper, seeded and thinly sliced
- 5 oz snow peas, trimmed and thinly sliced
- 1 1/2 cups bean sprouts
- 1 cup loosely packed cilantro leaves
- 1 cup loosely packed fresh mint leaves
- None None FOR THE SESAME DRESSING
- 2 tbsp mirin
- 2 tbsp grated palm sugar or brown sugar
- 1/4 cup lime juice
- 1 tbsp soy sauce
- 1 tsp sesame oil
- 1 None fresh long red chili pepper, seeded and finely chopped
- Place the rice in a sieve and rinse under cold water; drain. Place the rice in a small saucepan and cover with water. Bring to the boil. Reduce the heat to medium-low; cover and simmer for 35 mins or until the rice is soft and just split. Drain; cool.
- Meanwhile, for the sesame dressing, whisk all ingredients in a small bowl.
- Combine the rice with the remaining ingredients in a large bowl; toss gently to combine. Transfer to a bowl or a portable container, if using for a picnic.
- Drizzle the sesame dressing over the salad just before serving.
