Potato, Lentil And Frankfurter Soup
- 3 tbsp oil
- 1 None onion, peeled and chopped
- 14 oz potatoes, peeled and chopped
- 7 oz carrots, peeled and diced
- 2 None bay leaves
- 16 oz vegetable stock
- 20 oz cooked green lentils, drained
- 2 None Frankfurter sausages, sliced
- 2-3 tbsp white wine vinegar (according to taste)
- 1/3 cup creme fraiche (or sour cream)
- 1 tbsp fresh flat-leaf parsley, chopped
- Heat the oil in a saucepan and saute the onion, potatoes, carrots and bay leaves for 5 mins. Add the stock, bring to a boil, cover and cook over a medium heat for 15 mins.
- Add the lentils and sausages, bring to a boil and simmer for 5 mins. Stir in the vinegar and season with salt and black pepper. Ladle into bowls, add a dollop of creme fraiche (or sour cream) and sprinkle with the parsley.
