Bacon, Spinach And Feta Loaf
- 1/2 lb bacon, chopped
- 1 None medium brown onion, finely chopped
- 1/3 lb baby spinach leaves
- 1/2 tsp dried oregano leaves
- 1/3 cup self-rising flour
- 1/2 tsp salt
- 1/2 cup vegetable or extra light olive oil
- 1 None egg, lightly beaten
- 1 cup milk
- 6 oz feta, crumbled
- None None butter, to serve
- Preheat oven to 375u0b0F. Grease a 8 x 4 inch loaf pan. Add bacon and onion to a medium nonstick frying pan and cook and stir 5 mins or until bacon is crisp and onion is soft. Remove and reserve 1/4 of the mixture. Add spinach and oregano to pan and cook and stir until spinach is just wilted. Remove from pan and cool slightly.
- For the batter, sift flour and salt into a large bowl. Make a well at center. Add oil, egg and milk and stir until just combined. Don't overmix. Gently stir in spinach mixture and 2/3 of the feta. Spoon mixture into prepared pan. Top with remaining bacon mixture and feta. Bake 40-45 mins, or until a skewer inserted in the center comes out clean. Cool in pan 5 mins. Turn out onto a wire rack to cool slightly. Serve with butter.
