Pork Fried Rice With Eggs

  1. Heat a wok over medium-high heat. Lightly coat with oil. Add pork and stir-fry for 2 mins, or until browned. Add garlic and soy sauce. Stir-fry for 1 min. Set aside. Wipe wok clean.
  2. Whisk together eggs and egg whites. Lightly coat wok with oil. Stir-fry onion for 1-2 mins, or until soft. Set aside. Add egg and tilt to cover base. Cook for 1 min, or until set underneath. Fold in half and cook for 2 mins. Slice.
  3. Return pork and onion to wok. Add rice and carrot. Stir-fry for 1-2 mins, or until heated through. Set aside.
  4. Distribute stir-fried rice between serving bowls. Top with egg, basil and snow peas. Serve immediately.
