Pork Fried Rice With Eggs
- 10.5 oz ground pork
- 2 cloves garlic, minced
- 2 tbsp soy sauce
- 2 None eggs + 3 egg whites
- 1 None red onion, halved, thinly sliced
- 8.75 oz brown basmati rice, cooked
- 1 None large carrot, coarsely grated
- 1/4 cup fresh basil leaves, torn
- 3.5 oz snow peas
- Heat a wok over medium-high heat. Lightly coat with oil. Add pork and stir-fry for 2 mins, or until browned. Add garlic and soy sauce. Stir-fry for 1 min. Set aside. Wipe wok clean.
- Whisk together eggs and egg whites. Lightly coat wok with oil. Stir-fry onion for 1-2 mins, or until soft. Set aside. Add egg and tilt to cover base. Cook for 1 min, or until set underneath. Fold in half and cook for 2 mins. Slice.
- Return pork and onion to wok. Add rice and carrot. Stir-fry for 1-2 mins, or until heated through. Set aside.
- Distribute stir-fried rice between serving bowls. Top with egg, basil and snow peas. Serve immediately.
