Grilled Fruit
- 1/2 None pineapple
- 2 None mangoes
- 1/2 cup coconut liqueur
- 1/4 cup passionfruit pulp
- 1 tbsp brown sugar
- 1 cup heavy cream, whipped
- 2 tbsp coconut flakes, toasted
- Remove and discard top and base from pineapple. Cut pineapple into 1/4 inch-thick slices, cut each slice in half. Cut mangoes down each side of pit; cut a criss-cross pattern into flesh.
- Combine liqueur, passionfruit pulp and sugar in small saucepan. Stir on low heat, without boiling, until sugar dissolves. Simmer, uncovered, 5 mins. Combine fruit with passionfruit syrup in large bowl.
- Heat an oiled grill pan on medium-high heat or preheat the grill to medium. Cook fruit until browned both sides and tender, brushing occasionally with some of the syrup during cooking.
- Drizzle warm fruit with remaining passionfruit syrup. Serve with whipped cream and sprinkle with coconut.
