Apple And Pear Strudel
- 2 None Granny Smith apples, peeled, cored and chopped
- 1 None ripe pear, peeled, cored and chopped
- 2 tbsp sugar
- 1/4 cup golden raisins
- 1 1/2 tsp ground cinnamon
- 1/2 tsp ground ginger
- 8 sheets phyllo dough
- 4 tbsp (1/2 stick) butter, melted
- 3 tbsp dried breadcrumbs
- None None Ice cream or custard, to serve
- Preheat the oven to 350u0b0F. Line a baking pan with parchment paper.
- Combine apple, pear, sugar and 2 tbsp water in a medium saucepan. Stir on low heat, until sugar dissolves. Simmer, covered, 5 mins, until just tender. Stir in raisins, 1 tsp of the cinnamon and ginger. Cool.
- Place 1 sheet phyllo on a clean work surface. Brush lightly with butter and sprinkle with 1 tsp breadcrumbs. Repeat layers with remaining phyllo and breadcrumbs.
- Arrange fruit lengthwise across phyllo, leaving a 3-inch border at short ends. Fold in ends, then roll up to enclose. Place seam side down on prepared pan. Brush with remaining butter. Sprinkle with remaining 1/2 tsp cinnamon.
- Bake 30-35 mins, until crisp. Serve with ice cream or custard.
