Apple And Pear Strudel

  1. Preheat the oven to 350u0b0F. Line a baking pan with parchment paper.
  2. Combine apple, pear, sugar and 2 tbsp water in a medium saucepan. Stir on low heat, until sugar dissolves. Simmer, covered, 5 mins, until just tender. Stir in raisins, 1 tsp of the cinnamon and ginger. Cool.
  3. Place 1 sheet phyllo on a clean work surface. Brush lightly with butter and sprinkle with 1 tsp breadcrumbs. Repeat layers with remaining phyllo and breadcrumbs.
  4. Arrange fruit lengthwise across phyllo, leaving a 3-inch border at short ends. Fold in ends, then roll up to enclose. Place seam side down on prepared pan. Brush with remaining butter. Sprinkle with remaining 1/2 tsp cinnamon.
  5. Bake 30-35 mins, until crisp. Serve with ice cream or custard.
