Killer Burrito Casserole

  1. Brown ground meat; drain fat.
  2. Add bell pepper, onion, salt, pepper, tomatoes and Velveeta cheese.
  3. Simmer on low heat for 15 minutes.
  4. Place flour tortillas, one at a time, in hot cooking oil for about 5 seconds.
  5. Drain on a paper towel.
  6. Put a small portion of the meat mixture on the bottom of a long casserole dish.
  7. Add about 2 tablespoons of meat to each tortilla; roll up tortilla and place in the casserole dish.
  8. Top with remaining meat mixture and Cheddar cheese; bake for 30 minutes.
