Killer Burrito Casserole
- 1 lb. ground beef
- 1 Tbsp. cooking oil
- 1 bell pepper, chopped
- 1 small onion, chopped
- 1 tsp. salt
- 1 tsp. pepper
- 1 can Ro-Tel tomatoes
- 1/2 lb. Velveeta cheese
- 1 pkg. flour tortillas
- 1/2 c. cooking oil for tortillas
- 1 1/2 c. Cheddar cheese
- 1 c. Monterey Jack cheese
- Brown ground meat; drain fat.
- Add bell pepper, onion, salt, pepper, tomatoes and Velveeta cheese.
- Simmer on low heat for 15 minutes.
- Place flour tortillas, one at a time, in hot cooking oil for about 5 seconds.
- Drain on a paper towel.
- Put a small portion of the meat mixture on the bottom of a long casserole dish.
- Add about 2 tablespoons of meat to each tortilla; roll up tortilla and place in the casserole dish.
- Top with remaining meat mixture and Cheddar cheese; bake for 30 minutes.
