Banana Bread With Pecans And Lemon Icing
- 9 tbsp butter, at room temperature
- 1 tsp vanilla extract
- 2/3 cup sugar
- 4 oz mashed banana
- 2 None large eggs, at room temperature
- 1/2 cup self-raising flour
- 1 tsp baking soda
- 1/4 cup milk
- 1 tbsp lemon zest
- 7 oz vanilla buttercream icing
- 2 tbsp finely chopped pecans
- Preheat oven to 350u0b0F. Grease a 8 x 4 inch loaf pan with parchment paper, extending paper at long sides for handles.
- Using an electric mixer, beat butter, vanilla, sugar, banana, eggs, flour, baking soda and milk in a large bowl, on low speed, until combined. Increase speed to medium. Beat for 4-5 mins or until smooth and pale.
- Spread mixture into prepared pan smooth surface. Bake for 50 mins or until a skewer inserted at center comes out clean. Remove from oven. Let stand in pan for 5 mins. Turn out on to a wire rack to cool completely.
- Stir half the lemon zest into icing. Spread cooled loaf with icing. Sprinkle with pecans and remaining zest.
