Strawberry Marshmallow Cake
- 2/3 cup sugar
- 2 None eggs
- 1/3 cup plain yogurt
- 1 cup all purpose flour
- 1 1/2 tsp baking powder
- 1/2 cup sunflower oil
- 1 cup strawberry-flavoured marshmallows, chopped
- 3 tbsp strawberry syrup
- Preheat the oven to 325u0b0F. Grease an 8 cup loaf pan and sprinkle with flour. Beat the sugar, eggs and a pinch of salt until creamy. Beat in the yogurt. Mix the flour and baking powder together and beat in, alternating with the oil until both are incorporated.
- Mix the marshmallows and strawberry syrup together. Spoon the batter into the pan and swirl the marshmallows in to make a marbled effect. Bake for 40 mins. Allow to cool for 20 mins, then turn out of the pan and allow to cool completely on a wire rack.
