Walnut, Coffee And Pear Loaf

  1. Preheat the oven to 325u0b0F. Grease an 8 x 4-inch loaf pan; line bottom and sides with parchment paper, extending the paper 2 inches above the long sides for handles.
  2. Stir butter, milk and coffee in large saucepan on low heat, until butter melts and coffee dissolves. Remove from heat. Whisk in sugar and half the nuts. Whisk in egg.
  3. Peel, core and finely chop pear. Stir pear and sifted flour into milk mixture. Pour mixture into prepared pan; sprinkle with remaining nuts.
  4. Bake for 40 mins until toothpick inserted into center comes out clean. Cool in pan 10 mins. Remove from pan; cool completely on wire rack.
