Walnut, Coffee And Pear Loaf
- 5 tbsp butter
- 1/2 cup milk
- 1 tbsp instant coffee granules
- 1/2 cup firmly packed light brown sugar
- 1/2 cup coarsely chopped walnuts
- 1 None egg
- 1 medium pear
- 1 1/4 cups self-rising flour
- Preheat the oven to 325u0b0F. Grease an 8 x 4-inch loaf pan; line bottom and sides with parchment paper, extending the paper 2 inches above the long sides for handles.
- Stir butter, milk and coffee in large saucepan on low heat, until butter melts and coffee dissolves. Remove from heat. Whisk in sugar and half the nuts. Whisk in egg.
- Peel, core and finely chop pear. Stir pear and sifted flour into milk mixture. Pour mixture into prepared pan; sprinkle with remaining nuts.
- Bake for 40 mins until toothpick inserted into center comes out clean. Cool in pan 10 mins. Remove from pan; cool completely on wire rack.
