Shrimp, Mesclun And Mango Salad
- 1 bag (6 oz) mixed salad leaves
- 1 1/2 lbs cooked large shrimp, peeled and deveined, with tails intact
- 1 None mango, peeled, pitted and thinly sliced
- 1/2 cup toasted macadamias
- 1/2 cup cilantro leaves
- 4 None green onions, thinly sliced
- 2 tbsp macadamia oil
- 1 None lime, juiced
- 1 tbsp chopped cilantro
- 2 tsp sugar
- 2 tsp white balsamic vinegar
- 2 small red chili peppers, thinly sliced
- Combine mixed salad leaves, shrimp, mango, macadamias, cilantro leaves and green onions in a large bowl.
- For the dressing, whisk macadamia oil, lime juice, chopped cilantro, sugar, vinegar and chili peppers in a small bowl. Season to taste.
- Just before serving, drizzle dressing over salad and toss well.
