Grilled Potatoes With Chive Cream
- 4 large baking potatoes
- 3/4 cup sour cream
- 1 clove garlic, crushed
- 1 tbsp freshly squeezed lemon juice
- 2 None gherkins, drained and finely chopped
- 1/3 cup finely chopped fresh chives
- Place the potatoes in a medium saucepan. Cover with cold water and bring to a boil on medium-high heat. Reduce the heat to medium and boil gently for 8 mins. Remove from the heat. Drain and set aside for 15 mins or until cool. Wrap each potato in foil.
- For the chive cream, mix the remaining ingredients in a small bowl. Season to taste with salt and freshly ground black pepper.
- Preheat the grill to medium. Grill the potatoes with the hood closed, turning once or twice, for 10 mins, or until tender when pierced with fork.
- Remove the foil. Cut the potatoes in half and top with chive cream. Serve.
