Chicken Satay Naan Pizzas
- 1 tbsp vegetable oil
- 1 None red onion, halved, thinly sliced
- 14 oz boneless chicken thighs, trimmed and thinly sliced
- 3 tsp mild curry powder
- 1/3 cup satay sauce
- 4 pieces naan bread
- 3/4 cup mozzarella, grated
- 3 None tomatoes, chopped
- 2 None cucumbers, quartered lengthwise, sliced
- 1 tbsp French dressing
- Preheat oven to 450u0b0F. Line a baking sheet with parchment paper.
- Heat half the oil in a frying pan over high heat. Add onion and saute for 3 minutes or until lightly browned. Transfer onion to a plate. Heat remaining oil in same pan over moderately high heat. Add chicken and curry powder and cook, stirring, 5 minutes or until browned and cooked through. Add satay sauce and cook, stirring, for 1 minute or until heated.
- Place naan breads on a wire rack over prepared baking sheet. Top with chicken mixture and onion. Sprinkle with mozzarella. Bake for 10 minutes or until golden. Combine tomato, cucumber and dressing in a bowl. Serve pizzas with salad.
