Lamb Chops With Fries And Lemon Aïoli
- 1 pkg (20 oz) frozen French fries
- 12 None lamb chops, frenched trimmed
- 1 tsp ground cumin
- 2 tsp ground coriander
- 1/2 tsp paprika
- 2 tbsp plus 2 tsp lemon juice
- 1 tbsp olive oil
- 2 wedges preserved lemon peel
- 1 clove garlic, finely chopped
- 1/4 cup small fresh cilantro leaves
- 1/4 cup small fresh mint leaves
- 1/2 cup store-bought aioli
- Preheat the oven to 400u0b0F.
- Bake the French fries according to package directions.
- Sprinkle lamb on both sides with combined cumin, coriander and paprika; drizzle with 2 tbsp lemon juice. Season.
- Heat oil in a large skillet on medium heat. Cook lamb chops for 2 mins each side or until cooked to desired doneness. Cover to keep warm.
- For the lemon sprinkle, discard flesh from preserved lemon peel. Rinse under running water; pat dry. Finely chop peel; combine half in a small bowl with garlic and herbs.
- For the lemon aioli, add remaining preserved lemon peel and 2 tsp lemon juice to aioli; stir to combine.
- Serve lamb with French fries and lemon aioli. Top with lemon sprinkle.
