Spiced Pork Tenderloin With Citrus Potato Smash
- 2 None limes, finely grated rind and juice
- 1 None lemon, finely grated rind and juice
- 1 tbsp chopped mint
- 1 tbsp honey
- 1 tbsp olive oil
- 1 tsp ground coriander
- 1 tsp hot paprika
- 1 tsp ground cumin
- 750 g pork fillet, trimmed
- 1 tbsp vegetable oil
- None None steamed baby carrots and green beans, to serve
- -1 None Citrus potato smash
- 1 kg new potatoes, scrubbed
- 30 g butter, chopped
- 1 None orange, finely grated rind and juice
- Combine rind, juice, mint, honey, oil, coriander, paprika and cumin in a large shallow dish. Add pork, turning to coat in the marinade. Cover and chill for 1 hour.
- Heat oil in a large frying pan on medium. Cook pork for 10-15 minutes until cooked to taste.
- Serve pork in slices with Citrus Potato Smash, baby carrots and beans. Drizzle with combined remaining rind, juice and spices.
- Citrus potato smash: Cook potatoes in a large saucepan of boiling water for 10-12 minutes until tender. Drain and return to pan.---
- Lightly mash potatoes with butter. Add half the rind, half the juice and half the spices. Cover to keep warm.
