Chicken Macaroni And Cheese

  1. Preheat broiler.
  2. Melt butter in a saucepan over medium heat. Add flour and cook for 1 min. Slowly whisk in milk. Cook, stirring, until sauce boils and thickens. Reduce heat and simmer for 3 mins. Combine cheese then add 1/2 to sauce. Stir until melted and combined. Toss with macaroni, chicken and corn. Season. Transfer to a large baking dish and sprinkle with remaining cheese. Broil for 4-5 mins, until cheese is melted and golden brown.
  3. Serve with mixed greens.
