Chicken Macaroni And Cheese
- 3 1/2 tbsp butter
- 1/2 cup flour
- 3 cups low-fat milk
- 4.5 oz low-fat Cheddar cheese, grated
- 3 oz Parmesan cheese, grated
- 14 oz macaroni, cooked, kept hot
- 1 None small rotisserie chicken, shredded
- 1 (10 oz) can corn kernels, drained
- None None mixed greens, to serve
- Preheat broiler.
- Melt butter in a saucepan over medium heat. Add flour and cook for 1 min. Slowly whisk in milk. Cook, stirring, until sauce boils and thickens. Reduce heat and simmer for 3 mins. Combine cheese then add 1/2 to sauce. Stir until melted and combined. Toss with macaroni, chicken and corn. Season. Transfer to a large baking dish and sprinkle with remaining cheese. Broil for 4-5 mins, until cheese is melted and golden brown.
- Serve with mixed greens.
