Corn And Tomato Relish

  1. In a large pot, combine all ingredients except cornstarch and water.
  2. Bring to a boil.
  3. Reduce heat and simmer uncovered 30 to 40 minutes.
  4. Stir cornstarch and water until well blended.
  5. Add to vegetables and stir until slightly thickened, about 5 minutes. Ladle mixture into hot jars, leaving 1/2-inch headspace.
  6. Adjust lids.
  7. Process in boiling water bath 15 minutes.
  8. Makes 4 1/2 pints.
