Corn And Tomato Relish
- 1/2 c. sugar
- 1 Tbsp. turmeric
- 2 (16 oz.) cans whole kernel corn, drained
- 1 (16 oz.) can tomatoes, cut up
- 2 c. chopped onion
- 2 c. chopped, peeled cucumber
- 2 c. chopped green pepper
- 1 c. chopped celery
- 2 small chili peppers, seeded and diced
- 1 c. vinegar
- 2 tsp. mustard seed
- 2 Tbsp. cornstarch
- 1/4 c. cold water
- In a large pot, combine all ingredients except cornstarch and water.
- Bring to a boil.
- Reduce heat and simmer uncovered 30 to 40 minutes.
- Stir cornstarch and water until well blended.
- Add to vegetables and stir until slightly thickened, about 5 minutes. Ladle mixture into hot jars, leaving 1/2-inch headspace.
- Adjust lids.
- Process in boiling water bath 15 minutes.
- Makes 4 1/2 pints.
