Blueberry, Lime And Passionfruit Bars

  1. Preheat oven to 350u0b0F. Grease an 8x12 inch rimmed baking pan. Line base and long sides with parchment paper, extending paper 2 inches over sides.
  2. Whip egg whites until frothy. Stir in ground almonds, powdered sugar, flour, coconut, butter and lime zest. Transfer to prepared pan. Sprinkle with blueberries and drizzle with passionfruit pulp. Bake for 1 hour 15 mins. Let cool in pan for 10 mins then transfer to a wire rack to cool completely.
  3. Cut into rectangles and dust with powdered sugar to serve.
