Light Chocolate Cake
- 1 cup powdered sugar
- 1 tbsp cocoa powder
- 1/4 tsp instant coffee powder, mixed with 1 tbsp boiling water
- None None Light Chocolate Cake
- 3/4 cup granulated sugar
- 4 1/2 tbsp low-fat dairy spread
- 1 None egg
- 1/2 cup self-rising flour
- 2 tbsp cocoa powder
- 2 tbsp low-fat milk
- 1/4 tsp baking soda
- For the icing, sift together powdered sugar and cocoa powder. Add coffee and mix until smooth and spreadable. Set aside.
- Preheat oven to 350u0b0F. Lightly grease a deep, 8 inch round cake pan with oil. Line base with parchment paper.
- Cream sugar and spread together until smooth and creamy. Add egg, beating until combined. Sift together flour and cocoa powder. Alternately add flour mixture with milk, beginning and ending with flour. Combine 1/4 cup boiling water and baking soda. Fold into batter. Transfer to prepared pan. Bake for 35-40 mins, until a skewer inserted in the center comes out clean. Let cool in pan for 5 mins. Transfer to a wire rack to cool completely.
- Spread icing over cooled cake.
