Piri Piri Chicken Sandwich

  1. In a bowl, combine ground chicken, bread crumbs, piri piri sauce, onions and garlic. Season. Shape into 4 patties. Chill.
  2. Heat oil in a large frying pan over medium heat. Cook patties for 4-5 mins per side, until golden and cooked through. Place a slice of cheese on each patty. Cover pan with lid and set aside for 1-2 mins, until cheese melts.
  3. Meanwhile, to make the spicy mayonnaise, whisk together mayonnaise, piri piri sauce and lemon juice. Season.
  4. Fill each roll with lettuce, avocado and tomato. Top with patties. Serve with spicy mayonnaise.
