Warm German Potato Salad

  1. Boil, steam or microwave potatoes until tender, drain.
  2. Meanwhile, make the dressing by combining ingredients in a screw-top jar and shaking well.
  3. Cook bacon in a heated medium frying pan, over medium heat, stirring, for 5 mins or until crisp. Drain on paper towels. Cook onion in same pan, stirring, for 5 mins, until softened. Add mustard seeds, cook, stirring, for 1 min.
  4. Combine potatoes, bacon, onion mixture, parsley and dressing in a large bowl. Season to taste.
