Warm German Potato Salad
- 1 lb potatoes, unpeeled, cut into 1/2 inch cubes
- 2 slices bacon, thinly sliced
- 1 None red onion, thinly sliced
- 1/2 tsp black mustard seeds
- 2 tbsp fresh flat-leaf parsley, finely chopped

- 2 tbsp cider vinegar
- 2 tbsp olive oil
- 2 tsp Dijon mustard
- 1/2 tsp sugar
- Boil, steam or microwave potatoes until tender, drain.
- Meanwhile, make the dressing by combining ingredients in a screw-top jar and shaking well.
- Cook bacon in a heated medium frying pan, over medium heat, stirring, for 5 mins or until crisp. Drain on paper towels. Cook onion in same pan, stirring, for 5 mins, until softened. Add mustard seeds, cook, stirring, for 1 min.
- Combine potatoes, bacon, onion mixture, parsley and dressing in a large bowl. Season to taste.
