Sweet And Sour Shrimp
- 1 lb. shrimp or chicken
- 3 Tbsp. olive oil
- sugar
- 1/4 c. vinegar
- 1/4 c. rice wine or cooking sherry
- 5 long stem green onions, cut up
- 1 Tbsp. cornstarch
- 1/3 c. water
- cooked rice
- Mix together the vinegar and rice wine, slowly adding the sugar to taste and stirring constantly.
- The mixture should have a sweet but sour taste.
- Remove the shells from the shrimp; devein if you prefer.
- Heat up oil in a pan.
- Add shrimp or chicken when pan is hot; cook until done.
- Reduce heat.
- Pour vinegar mixture into pan; stir well.
- Mix cornstarch and water; slowly pour into pan to thicken mixture.
- Stir until bubbles (you may not need all of thickener).
- Add green onions just before serving.
- Serve with or over rice.
- Makes 3 to 4 servings.
