Baked Fish With Chermoula
- 1/2 cup fresh cilantro leaves, chopped
- 2 tbsp olive oil
- 1 tbsp paprika
- 1 tsp ground cumin
- 1 None lemon, zested and juiced
- 8 (3.5 oz) fish fillets
- 7 oz couscous
- None None steamed green beans, to serve
- None None steamed butter beans, to serve
- Preheat oven to 350u0b0F. Line a baking tray with foil.
- In a bowl, combine 1/4 cup cilantro, olive oil, spices and 1/2 of the lemon zest. Pour over fish in a shallow baking dish and set aside to marinate for 10 mins.
- Arrange fish on prepared tray. Bake for 5-7 mins, until cooked through.
- Meanwhile, place couscous and remaining lemon zest in a bowl. Add lemon juice and 1/2 cup boiling water. Cover with plastic wrap and let stand for 5 mins. Fluff with a fork then fold in remaining cilantro. Season to taste.
- Serve couscous with fish and beans.
