Baked Fish With Chermoula

  1. Preheat oven to 350u0b0F. Line a baking tray with foil.
  2. In a bowl, combine 1/4 cup cilantro, olive oil, spices and 1/2 of the lemon zest. Pour over fish in a shallow baking dish and set aside to marinate for 10 mins.
  3. Arrange fish on prepared tray. Bake for 5-7 mins, until cooked through.
  4. Meanwhile, place couscous and remaining lemon zest in a bowl. Add lemon juice and 1/2 cup boiling water. Cover with plastic wrap and let stand for 5 mins. Fluff with a fork then fold in remaining cilantro. Season to taste.
  5. Serve couscous with fish and beans.
