Zucchini Casserole
- 1 (6 oz.) pkg. Cheddar cheese slices
- 1/4 c. (4 Tbsp.) butter, melted
- 3 c. rye bread cubes
- 4 c. thinly sliced zucchini
- 2 Tbsp. onion flakes or minced
- 3 tomatoes, sliced
- 2 Tbsp. sweet pepper flakes or minced
- 1/2 tsp. salt
- dash of black pepper
- Cut extra long slices of cheese into 3 equal portions (this makes 12 slices).
- Pour melted butter over rye bread cubes; mix thoroughly.
- Grease a 1 1/2-quart casserole.
- Alternately place layers of zucchini, onion, tomato, pepper, cheese and bread cubes in casserole.
- Sprinkle with salt and pepper.
- Repeat process twice, ending with bread cubes.
- Cover; bake in moderate oven (350u0b0) for 1 hour, or until vegetables are tender.
- Serve hot. Makes 6 servings.
