Zucchini Casserole

  1. Cut extra long slices of cheese into 3 equal portions (this makes 12 slices).
  2. Pour melted butter over rye bread cubes; mix thoroughly.
  3. Grease a 1 1/2-quart casserole.
  4. Alternately place layers of zucchini, onion, tomato, pepper, cheese and bread cubes in casserole.
  5. Sprinkle with salt and pepper.
  6. Repeat process twice, ending with bread cubes.
  7. Cover; bake in moderate oven (350u0b0) for 1 hour, or until vegetables are tender.
  8. Serve hot. Makes 6 servings.
