Sausage And Potato Tortilla Bake
- 1 1/2 lbs potatoes, peeled and sliced
- 1 tbsp vegetable or olive oil
- 8 None thick garlic and herb sausages
- 2 None small red onions, cut into thin wedges
- 2 (14 oz cans) chopped tomatoes
- 2 tbsp fresh flat-leaf parsley, chopped
- 2 tsp dried basil
- 5 None flour tortillas
- 1 cup cheddar cheese, shredded
- None None green salad, to serve
- Preheat oven to 350u0b0F. Grease and line base and sides of an 8 inch springform pan with doubled baking paper, extending 2 inches above rim. Cook potatoes in boiling salted water for 15 mins, or until tender. Drain and cool.
- Meanwhile, heat oil in a large frying pan over a medium heat. Add sausages and onions and cook and turn for 10 mins, or until sausages are browned and cooked through. Transfer sausages to a heatproof plate. Transfer onion to a medium bowl. Cool sausages and cut in half lengthwise.
- Add tomatoes, parsley and basil to onion. Stir to combine. Place 2 tortillas over base of prepared pan. Top with one-third of the sausage, one-third of the potato, one-third of the tomato mixture and one-quarter of the cheese. Top with 1 tortilla, one-third of the sausage, half the remaining potato, half the remaining tomato mixture and one-third of remaining cheese. Repeat layer once more, finishing with a tortilla. Sprinkle with remaining cheese. Place on a baking tray. Bake for 15-20 mins, until golden brown. Stand for 10 mins. Serve with salad.
