Stir-Fried Chicken With Broccoli And Hokkien Noodles
- 1/4 cup peanut or vegetable oil
- 1 lb chicken thighs, trimmed, chopped
- 2 None small red onions, cut into thin wedges
- 2 cloves garlic, finely chopped
- 10.5 oz broccoli, cut into small florets
- 1/3 cup oyster sauce
- 1/4 cup sweet chili sauce
- 16 oz fresh thin hokkien noodles, soaked in boiling water for 1 min, drained
- 3.5 oz bean sprouts
- 1/4 cup toasted unsalted peanuts, chopped
- Heat 1 tbsp oil in a wok over high heat. Stir-fry chicken, in batches, for 2-3 mins, or until just cooked. Set aside. Add remaining oil and stir-fry onions, garlic and broccoli for 2-3 mins, or until onion softens. Add oyster sauce, chili sauce, chicken and noodles and stir-fry until and heated through. Remove from heat and toss with bean sprouts. Season. Serve sprinkled with peanuts.
