Easy Melt-And-Mix Fruit Cake
- 1 kg mixed dried fruit
- 35 g flaked almonds, toasted
- 2 tbsp sweet sherry
- 2 tsp vanilla extract
- 250 g brown sugar
- 250 g butter, chopped
- 125 ml milk
- 3 None large eggs, lightly beaten
- 450 g plain flour
- 1/2 tsp bicarbonate of soda
- 2 tsp mixed spice
- Preheat the oven to 120u0b0C/100u0b0C fan/gas 1. Grease a deep 22cm-diameter cake tin or 19cm-square cake tin, cover the base and sides with 2 layers of brown paper and 2 layers of baking paper, bringing the paper 5cm above the edge of the tin.
- Combine the dried fruit, nuts, sherry, vanilla and sugar in a large bowl. Combine the butter and milk in a small saucepan, stir over the heat, without boiling, until the butter has melted.
- Add the butter mixture, eggs and sifted dry ingredients to the fruit mixture and mix well. Spread into the prepared tin. Bake for 5 hours, or until a skewer comes out clean. Cover hot cake with foil; cool in tin.
