Greek Salad With Fried Feta
- 100 ml white wine vinegar
- Pinch None caster sugar
- 20 g parsley, finely chopped
- 7 tbsp olive oil
- 500 g tomatoes, diced
- 1 None cucumber, diced
- 1 None onion, diced
- 1 None lettuce, chopped
- 75 g black olives
- 200 g feta, sliced
- 1 None egg, beaten
- 50 g breadcrumbs
- Whisk the vinegar, sugar and 3/4 of the parsley together and season. Whisk in 5 tbsp oil. Mix the tomatoes, cucumber, onion, lettuce and olives with the vinaigrette and set aside.
- Dip each slice of feta in the beaten egg then cover with breadcrumbs and press down lightly so that the breadcrumbs stick to the feta. Heat 2 tbsp oil in a pan, add the feta and fry each piece for 1-2 mins on each side until golden. Divide the salad between 4 plates and place the feta on top. Sprinkle with the remaining parsley then serve.
