Nonna'S Handkerchiefs

  1. Heat olive oil in a saucepan over medium-low heat. Cook onion, celery, carrot and garlic for 5 mins, or until soft. Add ground beef and pork. Cook until browned. Stir in tomato paste, tomatoes and stock. Bring to a boil then reduce heat and simmer, covered, for 30 mins.
  2. Remove lid. Add oregano and season to taste. Cook for 30 mins, or until all liquid has evaporated and mixture is dry. Set aside to cool.
  3. Meanwhile, to make the balsamella sauce, melt butter in a saucepan over medium-low heat. Cook flour for 2-3 mins. Slowly whisk in milk. Cook until thick and smooth.
  4. Preheat oven to 350u0b0F. Grease a baking dish.
  5. Cut lasagna sheets into 8 - 6 inch squares. Cook in boiling, salted water for 2-3 mins. Drain then transfer to damp tea towels. Place 2 tbsp meat filling in the center of each pasta square. Fold into triangles then bring 2 corners together to form a handkerchief shape. Transfer to prepared dish, top with balsamella sauce and sprinkle with mozzarella. Bake for 35 mins, or until golden brown.
