Squash Casserole
- 2 lb. yellow squash
- 1 medium onion, chopped
- 1 large sweet green bell pepper, chopped
- 4 large eggs, beaten
- 1/2 pt. whipping cream
- 1/2 lb. Cheddar or American Kraft cheese, grated
- 48 Ritz crackers
- 1 tsp. sugar
- 2 tsp. seasoned salt
- 1 tsp. salt
- 1/2 lb. butter or margarine
- Cook
- squash without salt until tender; drain and mash. Braise onion
- and pepper in half of the butter.
- Crush 24 Ritz crackers and
- add
- to
- the
- squash.tdd
- onion
- and pepper to square mixture.
- Add
- grated cheese and mix well.tdd seasonings and mix.
- Add
- cream
- and mix.teat eggs well and add to mixture. Put
- in
- casseroletish.
- Mix
- 24 more crushed Ritz crackers with remaining butter (melted) and sprinkle on top of casserole.
- Bake in a 300u0b0 oven for 50 minutes or until light brown.
- This makes one large or 2 small casseroles.
