Grilled Chicken With Charred Lemons
- 4 None lemons, 1 juiced and zested, 3 cut into quarters
- 2 tbsp vegetable or olive oil
- 2 cloves garlic, minced
- 2 tsp dried oregano leaves
- 2 (2 1/4 lb) chickens, halved lengthwise
- None None Greek salad, to serve
- Whisk together lemon juice, lemon zest, oil, garlic and oregano. Coat chicken with 1/2 the marinade, cover with plastic wrap and chill for 15 mins. Reserve remaining marinade.
- Preheat grill. Drain marinade from chicken and discard. Lightly coat chicken in oil then grill, cut-side down, for 15 mins. Flip over and cook for another 15-20 mins, until browned and cooked through, basting every 5 mins with reserved marinade. Set aside, cover with foil and let rest for 5 mins.
- Meanwhile, lightly coat quartered lemons with oil. Grill, turning, for 2-3 mins, or until charred. Serve chicken with grilled lemons and Greek salad.
