Grilled Chicken With Charred Lemons

  1. Whisk together lemon juice, lemon zest, oil, garlic and oregano. Coat chicken with 1/2 the marinade, cover with plastic wrap and chill for 15 mins. Reserve remaining marinade.
  2. Preheat grill. Drain marinade from chicken and discard. Lightly coat chicken in oil then grill, cut-side down, for 15 mins. Flip over and cook for another 15-20 mins, until browned and cooked through, basting every 5 mins with reserved marinade. Set aside, cover with foil and let rest for 5 mins.
  3. Meanwhile, lightly coat quartered lemons with oil. Grill, turning, for 2-3 mins, or until charred. Serve chicken with grilled lemons and Greek salad.
