Orange Cheesecake

  1. Press graham cracker crust mixture into a 10-inch spring-form pan.
  2. Bake at 375u0b0 for 8 minutes; cool.
  3. Drain mandarin oranges, reserving 1/2 cup liquid.
  4. Combine mandarin oranges and Cointreau; stir gently.
  5. Set aside, stirring occasionally.
  6. Combine cream cheese, orange rind and flavorings in large mixing bowl; beat until fluffy and gradually add sugar, beating well after each addition.
  7. Pour filling into pan.
  8. Bake at 350u0b0 for 50 minutes or until cheesecake is almost set.
