Chili Beef And Vegetables With Noodles
- 4 cloves garlic, crushed
- 1/4 cup fish sauce
- 1 tbsp soy sauce
- 2 tbsp oyster sauce
- 3 None fresh small red Thai chili peppers, finely chopped
- 2 tsp brown sugar
- 1 stalk (4 inches) fresh lemon grass, finely chopped
- 1/4 cup coarsely chopped fresh cilantro
- 1 lb beef sirloin steak, thinly sliced
- 1 lb thick rice noodles
- 2 tsp peanut oil
- 6 None green onions, trimmed and quartered
- 5 oz snow peas
- 12 oz baby bok choy
- 2 medium tomatoes, cut into wedges
- Combine garlic, sauces, chili pepper, sugar, lemon grass and cilantro in large bowl. Add beef; turn to coat. Cover; refrigerate 3 hours or overnight.
- Place noodles in medium heatproof bowl; cover with boiling water. Let stand until just tender; drain.
- Heat oil in wok on high heat. Stir-fry beef mixture, in batches, until browned all over. Remove beef from wok. Add onions to wok; stir-fry until onions are lightly browned.
- Add snow peas, bok choy, tomatoes, noodles and beef mixture to wok; cook, stirring, until heated through.
- Serve sprinkled with additional cilantro leaves, if desired.
