Poached Pears With Espresso Syrup
- 2 small pears, peeled
- 1 None vanilla bean, halved lengthwise
- 1 tbsp dark brown sugar
- 1/2 tsp instant coffee granules
- None None FOR THE HAZELNUT WAFERS
- 1 None egg white
- 2 tbsp sugar
- 1 tbsp ground hazelnuts
- 1 tbsp flour
- 1 tbsp butter, melted
- Preheat the oven to 400u0b0F. Line a baking pan with parchment paper. For the hazelnut wafers, combine ingredients in a medium bowl. Spread mixture on prepared pan to make six 4 1/2-inch rounds. Bake for 8 mins or until golden and crisp around the edges. Cool on a wire rack.
- Cover pears with water in a medium saucepan; bring to a boil. Reduce heat to low; simmer, uncovered, for 30 mins or until pears are tender. Drain pears, reserving 1 cup cooking liquid.
- Combine reserved liquid, vanilla bean and sugar in same pan; bring to a boil, stirring. Add coffee. Reduce heat to medium; simmer, uncovered, for 10 mins or until syrup thickens slightly. Drizzle syrup over pears. Serve with wafers.
