Meatballs In Saffron Sauce
- 1 lb ground beef
- 2 oz basmati rice, washed, rinsed, drained
- 2 cloves garlic, minced
- 1/4 tsp ground cinnamon
- 1/4 tsp ground cumin
- 1 None onion, very finely chopped
- 1 tbsp olive oil
- 1/2 tsp ground chili
- 1/2 tsp saffron threads
- 2 tbsp chopped fresh parsley leaves
- 1 None lemon, juiced
- None None steamed couscous, to serve
- None None lemon wedges, to serve
- Combine ground beef, rice, garlic, cinnamon and cumin. Season. With wet hands, shape mixture into small meatballs. Chill for 10 mins.
- Bring onion, oil, chili, saffron and 5 cups water to a boil. Add meatballs, cover and simmer for 30 mins. Stir in parsley and lemon juice. Serve with couscous and lemon wedges.
