Apple Custard Tart
- 1 1/2 cups all-purpose flour + 3 1/2 tbsp
- 1/2 cup ground almonds
- 2 tbsp powdered sugar
- 1/2 cup cold butter, cut into small cubes
- 1 None egg, beaten
- 1 cup amaretti or butter cookies
- 1 1/4 cups vanilla custard
- 3 None large apples, peeled cored and sliced (tossed in lemon juice)
- 1/3 cup apricot jam
- Combine flour, almonds, powdered sugar and a pinch of salt. Cut in butter until the mixture resembles breadcrumbs. Add egg then bring mixture together with your hands. Turn out onto a lightly floured surface and briefly knead until smooth. Wrap in plastic wrap and chill for 30 mins.
- Preheat oven to 400u0b0F. Grease and flour a 10 inch loose-bottomed tart pan. Roll out pastry then use to line prepared pan. Gently press into edges and trim excess. Prick base with a fork then chill for 10 mins. Sprinkle crushed amaretti cookies over base then carefully cover with custard. Arrange apple slices on top in a circular pattern and bake for 25 mins.
- Heat jam to loosen then brush over tart. Return to oven for 20-30 mins. Allow to cool for 20 mins before removing from pan. Can be served warm or cold.
