Mojito Cupcakes
- 1 (16.5 oz) box white cake mix, like Duncan Hines
- 3 None limes, zested and juiced
- 24 None mint leaves, 12 minced
- 1 (16 oz) tub white frosting
- None None green food coloring
- 2 tbsp coarse sparkling sugar
- 12 slices lime, halved
- Preheat oven to 350u0b0F. Line 2 - 12-cup muffin pans with paper liners.
- Prepare cake mix according to package directions, adding 1 tbsp lime zest, 1 tbsp lime juice and minced mint. Divide batter evenly between cupcake liners and bake for 18-20 mins, or until a skewer inserted in the center comes out clean. Let cool completely.
- Meanwhile, stir 2 tsp lime zest and 1 tsp lime juice into frosting. Tint to desired color with green food coloring. Transfer to a pastry bag fitted with a plain tip and pipe onto cupcakes. Sprinkle with sparkling sugar. Garnish with lime and remaining whole mint leaves.
