Tortellini With Mascarpone And Chanterelle Mushrooms
- 1 tbsp butter
- 1 None onion, peeled and finely diced
- 1 clove garlic, peeled and finely chopped
- 2/3 lb spinach, coarsely chopped
- 2 cups vegetable stock
- 1/2 lb mascarpone or whipped cream cheese
- 2 1/4 lb tortellini
- 1 tsp olive oil
- 1/4 lb chanterelle mushrooms, cleaned
- Heat the butter in a frying pan and saute the onion and garlic until soft. Add the spinach and cook until wilted. Season then deglaze with stock. Stir in mascarpone (or whipped cream cheese, if using) and simmer for 5 mins.
- Meanwhile, cook the tortellini in boiling salted water according to the package directions. Heat the oil in a second pan and saute the chanterelles for 3 mins. Toss tortellini with sauce then arrange on plates and top with chanterelles.
