Cheeseburger Loaf
- 2 lb. lean ground beef
- 2/3 c. quick-cooking rolled oats
- 1/2 tsp. salt
- 6 oz. pre-sliced, pasteurized process cheese food
- 1 egg, beaten
- 1/2 c. milk
- 1/3 c. catsup
- 1/4 tsp. pepper
- 2 slices onion
- Combine ground beef, egg, oats, milk, catsup, salt and pepper; mix well.
- Pat meat mixture on plastic wrap to an 8 x 12-inch rectangle.
- Arrange cheese slices over meat, overlapping as necessary and leaving edges of meat uncovered.
- Separate onion slices into rings and arrange over cheese slices.
- Using plastic wrap to lift meat, roll up, starting with 8-inch side.
- Seal edges well.
- Place in microwave-safe loaf dish or shallow baking dish. Cover with waxed paper.
- Microwave on Medium-high (70%) for 23 to 25 minutes or until center is no longer pink (150u0b0), rotating dish once or twice.
- Let stand, covered, 5 minutes.
- Remove from pan and slice.
- Makes about 10 servings, 225 calories each.
