Teriyaki Shrimp
- 1/4 cup Chinese cooking wine or dry sherry
- 2 tbsp honey
- 2 tbsp teriyaki sauce
- 2 tsp sesame oil
- 2 cloves garlic, finely chopped
- 2 tsp finely grated ginger
- 18 None jumbo shrimp, peeled and deveined, with head and tails intact
- 6 None green onions, cut into thirds
- 18 None bamboo skewers, soaked
- 4 oz Asian baby greens
- 1 tbsp sesame seeds, toasted
- None None Lime wedges, to serve
- Mix wine, honey, teriyaki sauce, oil, garlic and ginger in a large bowl. Add shrimp and green onions; toss well. Cover and refrigerate 30 mins.
- Thread one shrimp onto each skewer. Heat a grill pan on high heat or preheat grill to medium-high. Cook shrimp 2-3 mins each side, until cooked through. Cook onions 1 min or until golden.
- Toss onions with greens. Serve shrimp on a bed of greens. Sprinkle with toasted sesame seeds. Serve with lime wedges.
