Crispy Fish Sticks With Apple Coleslaw
- 1 lb firm white fish fillets, chopped
- 1 None lemon zest, finely grated
- 1 1/2 cups breadcrumbs
- 2 None eggs, lightly beaten
- 1 tbsp all-purpose flour
- 7 oz cabbage, thinly sliced
- 2 None carrots, grated
- 1 None green apple, grated
- 1 None scallion, thinly sliced
- 1/2 cup mayonnaise
- 2 tsp lemon juice
- None None Lemon wedges, to serve
- Preheat oven to 400u0b0F. Line a baking sheet with parchment paper and place a wire rack on top.
- Place fish and zest in a food processor. Pulse until mixture forms a paste. Transfer to a bowl. Add 1/2 cup breadcrumbs, season to taste and mix well. Form into 12 sticks.
- Whisk together eggs, flour and 2 tbsp water. Dip fish sticks in egg mixture, then into remaining breadcrumbs, pressing firmly. Place on a tray and chill, covered, for 30 mins.
- Transfer fish fingers to rack. Spray with olive oil and bake 15-20 mins, until golden.
- Meanwhile, make the apple coleslaw: Combine cabbage, carrots, scallion, mayonnaise and lemon juice and stir to combine. Serve fish sticks with apple coleslaw and lemon wedges.
