Pineapple Cookies
- 1 c. granulated sugar
- 1 c. light brown sugar, packed
- 1 c. butter or margarine
- 3 eggs
- 4 c. flour
- 1 c. nut meats, chopped medium fine
- 1 1/2 tsp. soda
- 1 tsp. salt
- 1/2 tsp. baking powder
- 1 1/2 tsp. vanilla
- 1 (No. 2) crushed pineapple, drained
- In large bowl of electric mixer combine sugars and butter. Beat until well mixed.
- Add eggs, one at a time.
- Continue beating until mixture is creamy.
- Next, add flour, soda, baking powder, salt, vanilla, crushed pineapple and nuts and mix on medium speed for a minute or two.
- Do not overbeat.
- Drop by teaspoons on greased cookie sheet and bake for about 10 minutes or until lightly browned.
- Do not overbake.
- Bake at 375u0b0.
- Place on cookie rack to cool.
